New Chef at Stone Corral Brewery

Charles Spock in February took over the kitchen of Stone Corral Brewery in Richmond. Spock, 34, came from Roots, a farm-to-table restaurant in Rutland where he was executive chef the last four years.

Spock said he was offered a couple of restaurant jobs in the area, and opted for Stone Corral.

“It wasn’t a restaurant move, per se,” Spock said. “It was a lifestyle move from Rutland to the Burlington-Waterbury area. We decided that seven years in Rutland was enough, so we moved up here.”

Spock lives in the Old North End with his girlfriend, Jennifer Uzarski, who is the manager of Parkside Kitchen, also in Richmond.

The chef position at Stone Corral appealed to Spock because it offered a bit of a break from working 70 hours a week as the brewpub builds out its kitchen, he said.

“It will be a nice way to transition into that,” Spock said. “Which is important, not to get burned out.”

He put a smoker in the kitchen, which he uses for pork shoulder, salmon and vegetable dishes.

“We have limited equipment,” Spock said. “We’re slowly putting things in place, and waiting for the hood system.” When he gets a grill, Spock said, “we can really start rolling.”

He hopes to have a new supper menu in place by summer, Spock said, and intends to use the Prohibition Pig model, noting the Waterbury brewpub’s high-end sandwiches and “quality local stuff.”

“Good, honest food is basically what I can say,” Spock said.
